2009 Winning Recipes

Overall BEST muffin recipe:

SWEET

HONEY WATERMELON SAKATOON MUFFIN

YIELD: 12 MUFFINS

1/3 C Margarine or butter
1/4 C honey
1 egg
1/2 C milk
1 C grated watermelon
1 C sakatoons
2 Tsp. baking powder
1 C flour

cream butter and honey.  Add egg. Mix thoroughly.
Add watermelon and milk.
Mix
Add flour, and baking powder.
Add saskatoons last.
Stir gently, to mix. Put into slightly greased muffin tins or tins lined with paper cups.

Bake 375 F approximately 20 - 25 minutes.

2nd Prize
Sunny Boy Muffins

2 C milk
2 C Sunny Boy Cereal
2 Eggs
4 Tbsp cooking oil
1 C honey
1 tsp. salt
2 Tsp. baking soda
2 C white flour, sifted
2 C saskatoons

Warm milk almost to a boil and stir in the Sunny Boy cereal.  Set aside for at least 30 minutes
Meanwhile, preheat oven to 375F

Mix the soaked cereal, eggs and cooking oil in a mixer.  Return to bowl and add honey.
Combine salt, baking soda and flour.  Add to batter.
Mix in fruit.
Fill 24 muffin cups almost to the top.  Bake 25 minutes until light golden brown.

Saskatoon Muffins
 1 3/4 C all purpose Robin Hood Flour
1/2 C Rogers white sugar
3 Tsp. Baking Powder
1 C Dairyland Milk
1 Egg (locally produced)
1/2 tsp. Sifto Salt
1 C frozen Saskatoons
1 tsp. lemon rind

Stir dry ingredients together and add frozen saskatoons.
Combine egg, milk and melted butter and stir them into flour  misture add saksatoons, stirring just to moisten. 
DO NOT BEAT.

Bake 375F for 20 minutes.



SAVOURY

1ST PRIZE
ROCKY MOUNTAIN CHEESE AND BACON MUFFINS
yield: 12 muffins


2C All purpose flour
1 Tbsp baking powder
1/4 tsp. Salt
1/2 C grated cheddar cheese
4-5 strips, cooked and crumbled bacon
2 Tbsp. honey
1 Egg
1 C milk
1/4 C cooking oil

Method:
Measure first 5 ingredients into large bowl.
Stir thoroughly and make a well in center.
Beat egg slightly, add milk, oil and honey.
Pour into well and stir to moisten.
Fill muffin cups 3/4 full
Bake at 400F 20 - 25 minutes.
let stand for 5 minutes, then remove from pan.



2ND PRIZE
CHEESE BACON AND DILL MUFFINS

6 strips lean bacon
2 C flour, sifted
4 tsp. baking powder
2 Tbsp. sugar
1/2 tsp. Windsor salt          (Elkpoint, Alberta)
1 1/2 C grated sharp cheese     (Rocky Mountain cheese, Calgary)
1/4 C finely chopped dill          (home grown!)
1 C milk          (Lucerne, Calgary)
1 egg          (local chickens supplied this)
3 Tbsp melted butter / margarine (Foothills Creamery)
Heat oven to 375 F. Grease muffin tins well.  Fry bacon until crisp.  Drain dry and snip bacon into small bits.
Combine flour, baking powder, sugar, salt, grated cheese, bacon bits and dill in a mixing bowl.  Beat egg, milk andm elted maragrine together.  Pour the liquids into the combined dry ingredients and mix only until well blended.  Fill prepared tins 2/3 full and bake 20 minutes.  Enjoy!!


3RD PRIZE
HONEY BACON CHEESE MUFFINS

1/4 C honey
1/4 C butter or margarine
1 Egg
1 C milk
1 Tsp. baking powder
1 tsp. soda
1 C bacon, fried crisp and crumbled
3/4 C Grated cheese
1 C flour
cream honey and butter.  Add egg and beat well.  Add milk.  Mix
Add 1/2 C flour
beat.
Add bacon and cheese and remaining flour.
Fill prepared muffin tins 2/3 full.  Bake 375F 20 - 25 minutes.
